Ingredients 8-10 servings
1 watermelon of around 7 kg
90 grams of sweet cornflour per liter of watermelon juice
150 grams of sugar per liter of juice
200 grams of dark chocolate flakes
100 grams of candied pumpkin
1 vanilla pod
Fresh flowers of Jasmine
Cut the "Mellone" (watermelon) into slices, remove the peel and seeds and pass the pulp in the blender. Calculate the amount of juice obtained and then adjust the doses of sweet corn flour and sugar.
If the watermelon is very sweet and aromatic, you can decrease the sugar, if it is tasteless, vice versa, you may increase it.
In a saucepan, cold melt the sweet corn flour and sugar in the juice of melon, pass the mixture on the stove over low heat, continuing to mix until it has thickened.
Remove the mixture (“gelo”) from the heat as soon as the first bubbles appear, at this point, add the vanilla and pour into a bowl or wet molds, in which you have already put a piece of chocolate and candied pumpkin cut into pieces, while you will pour the remaining on top after the “gelo” is in the bowl or mold.
Let stand in the refrigerator for about a day. Before serving the “gelo”, remove it from the mold and garnish with jasmine flowers.
